Recipe inspiration today from our neighbor, Tyler. Coconut curry chicken soup in the slow cooker! He was nice enough to write the recipe out for us to share with you.
1 can coconut milk
32 oz chicken broth
2 tsp curry powder
2 tbsp lemon juice
2 tbsp soy sauce
1 tsp ginger
1 clove minced garlic
1/2 yellow onion, chopped
1/2 red bell pepper, chopped
1 carrot, chopped
2 chicken breasts, cubed
8 oz sweet peas or snow peas
8 oz mushrooms, sliced
2 tbsp sriracha (optional for those who like a little kick)
Set it and forget it in the slow cooker; 4 hours on high, or until chicken is cooked through.
